Cranberry Corn Bread

Ingredients

  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 1/2 cup white sugar
  • 1 tbsp salt
  • 3 tbsp baking powder
  • 2 pc eggs
  • 1 cup milk
  • 1/3 cup applesauce
  • 1-11/2 cup cranberries

Instructions

  • Preheat oven to 400F or 200C degrees. Lightly grease an angel food pan.
  • Combine dry ingredients (flour, cornmeal, sugar, salt, and baking powder).
  • In a separate bowl combine wet ingredients (eggs/beaten, and milk).
  • Make a well (hole in the middle) of dry ingredients, and pour in liquid ingredients. Stir until justcombined. Add cranberries, and combine until mixed. Pour mixture into greased angel food pan.
  • Bake in preheated oven for about 20-25 minutes. When the toothpick comes out clean, then it isdone.
  • Take out of oven, and leave in pan for 10 minutes, and then put onto baking rack. Best servedwhen warm.
