Cranberry Apple Scones
- 4 cup flour
- 1 1⁄2 cup sugar
- 3 tsp baking powder
- 3 tsp baking soda
- 1 tsp salt
- 1/2 tsp butter, cubed
- 1/2 cup butter, cubed
- 2 apples, peeled, cored - shredded or diced
- 1 cup milk
- 1 cup cranberries - frozen work well (sprinkle lightly with flour to stop from bleeding) ordried
- 3 Tbsp milk
- 3 Tbsp white sugar
- 1 tsp ground cinnamon
Combine flour, sugar, baking powder, baking soda, and salt in a large bowl and whisk together.Cut in butter until crumbly. Add apple, cranberries and milk. Mix/stir to make a soft dough. Turndough onto lightly floured surface and knead gently; cut dough into 2 pieces, and roll into 10inch circles. Once dough is ready for cutting, brush tops with milk. Combine the sugar and cinnamon andthen sprinkle over the tops of the dough. Cut circles into pie-shaped wedges, 8 to 10 per circle. Place on greased baking tray and cook at375F for 18 - 20 min or till golden brown on top--test with a pick/butter knife if unsure. Serve with butter.
