Cranberry Bites
- 1 pack frozen puff pastry
- 1 wheel triple cream brie
- 1 cup homemade cranberry sauce
- 1/2 cup spiced pecans, chopped
Preheat oven to 375 F. Spray a mini muffin tin with non-stick cooking spray. Thaw the puff pasty dough, but not completely. You want it to be a bit firmer. With a sharp knife, cut the sheets into 3x3 inch squares. Press each square into a muffin tin and prick with a fork a few times so it doesn’t puff too much. Cube the brie and place each cube into the centre of each puff pastry square. Top brie with freshly made cranberry sauce. Top with spiced pecans pieces. Bake for about 18-20 minutes until corners are nicely browned.
