Cranberry Corn Bread
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 1/2 cup white sugar
- 1 tbsp salt
- 3 tbsp baking powder
- 2 pc eggs
- 1 cup milk
- 1/3 cup applesauce
- 1-11/2 cup cranberries
Preheat oven to 400F or 200C degrees. Lightly grease an angel food pan. Combine dry ingredients (flour, cornmeal, sugar, salt, and baking powder). In a separate bowl combine wet ingredients (eggs/beaten, and milk). Make a well (hole in the middle) of dry ingredients, and pour in liquid ingredients. Stir until justcombined. Add cranberries, and combine until mixed. Pour mixture into greased angel food pan. Bake in preheated oven for about 20-25 minutes. When the toothpick comes out clean, then it isdone. Take out of oven, and leave in pan for 10 minutes, and then put onto baking rack. Best servedwhen warm.
